In a barrel-aged whiskey, toasted and charred oak gives the spirit its color and flavor profile. The spirit’s flavors become more complex the longer whiskey soaks in oak. Some people prefer a bolder whiskey that has aged slightly longer, but at some point the oak flavor will take over the grains. The fun of aging your own whiskey is finding that balance!
