Trail of the Cedars Absinthe1 oz. water1 oz. mint simple2 oz. half & halfSmall scoop of iceShake until ice is almost completely dissolvedDump into rocks glass filled with iceGarnish with spanked mintTo make mint simple: In a pot, dissolve 2 ½ cups sugar with 2 ½ cups water. Bring to a boil. Turn off heat. Add 4 oz. fresh mint. Let steep for 30 minutes. Strain and cool for serving. (For this cocktail, we like to add a little green food coloring to the simple, after straining.) Northern LightsIn a rocks glass:Ice1/2 oz. Trail of the Cedars Absinthe1 oz. Glacier Distilling GinTop with grapefruit soda (we use San Pellegrino)Add a float of Little Cottonwood liqueurGarnish with fresh lemon wedge SazeracChill rocks glass and set asideIn a shaker:Make a “quick” simple in the bottom, stirring a small scoop of brown sugar with a small splash of waterAdd 1 1/2 oz.
