Huckleberry

We begin with our rye-based gin, infused with juniper, coriander, and wildcrafted spruce tips, then introduce native, wild huckleberries into the mix. The berries soak in neutral spirit over winter, releasing their natural color and flavor. In spring, we press the fruit, blending its high-proof juice back into the gin and lightly sweetening the final spirit. Expect a bright, herbal nose from the gin’s botanicals, balanced by a subtle tartness and gentle sweetness from the huckleberries—no artificial flavors or colors added.
